肌肽(carnosine)在體內為 β-丙胺酸(β-Alanine)與 L-組胺酸(L-Histidine)組成為 β-Alanyl-L-Histidine,在1900 年即被發現各組織中含有 carnosine,以肌肉與神經組織中含量較多,肌肉中 carnosine 具酸鹼緩衝、清除自由基、提升抗氧化能力以及影響肌漿質網中鈣離子調控等生理功能,而影響體內 carnosine 含量的因素包含:肌纖維型態、性別與年齡、運動訓練模式、飲食型態及補充 β-Alanine 等,其中營養增補策略的 β-Alanine 補充劑為許多學者熱烈探討,以 β-Alanine 補充提升 carnosine 作為肌肉緩衝物質,並減低肌肉疲勞作用為許多學者所認同,學者指出 β-Alanine 補充(2-6 克/天)可增加肌肉中20~80%的 carnosine 含量,對選手在高強度運動表現以及運動訓練適應性(training adaptation)皆有正向提升,因此,對高強度、爆發型訓練的選手而言,提升體內 carnosine 含量的營養策略將是值得探討的主題。
