穩定的能量供應是維持運動品質的關鍵;所有的胺基酸都可以轉變成它們的酮酸類似物(keto acid analigues),然後再轉變成丁酮二酸(oxaloacetate)和磷酸烯醇丙酮酸鹽(phosphoenolpyruvate;PEP),這意謂著運動時可由胺基酸來供給能量(poortmans, 1993);丙氨酸是人體肌肉中含量最多的自由胺基酸,透過對它的代謝途徑之了解,有助於明瞭蛋白質在能量上所扮演的角色。
