近十幾年來許多運動生理學與運動醫學研究者都認為,咖啡因是官能增補劑之一。分析近幾年來對咖啡因的文獻綜評,指出使用咖啡因對運動表現上的效果有:1.促進耐力性運動的成績,2.提高力量和爆發力,3.加快反應時間。咖啡因之所以能增強運動表現,主要可能的機轉分析如下: 1.咖啡因促使較多鈣離子由肌漿網中被釋放出來,於是細胞內鈣離子之活性大增,使肌肉之收縮力增加。 2.咖啡因增加肌纖維細絲對鈣離子的親和性,因而增加肌肉收縮的張力。 3.咖啡因能抑制磷酸二酯酶,使cAMP的濃度增高,因而活化脂肪酶,使三醯甘油脂分離出甘油與游離脂肪酸。 4.咖啡因可使腎上腺素的分泌增加,導致提高腺苷酸環化酶的活性,促使ATP分解形成cAMP的濃度增加。 5.咖啡因為腺苷酸A1受體的競爭性抑制劑,腺苷酸和A1受體結合後會抑制腺苷環化酶,咖啡因籍由競爭性的抑制作用,造成對腺苷酸的作用,使cAMP濃度增加。 雖然咖啡因廣存於日常生活的食物和藥物中,但過量使用對健康所造成的不利影響:如緊張、煩躁、難眠、焦慮、 心跳加速、腸胃不適;嚴重的造成胃潰瘍、精神錯亂、昏睡、心室的無節律,甚至死亡。長期過度使用可能導致嚴重的後果。以致國際奧會在1972年將咖啡因列為禁藥之一,除了何護運動過度使用咖啡因外,也是想防止運動員從咖啡因獲利,而造成比賽的不公平。
