早期醣類主要利用結構及消化吸收情形區分為簡單醣類及複合醣類,經過加工製程可能會影響體內吸收的狀況,Jenkins等人於1981年提出昇糖指數(glycemic index, GI)理論,主要在控制糖尿病患者的血糖,近幾年多運用在減重及運動。運動前攝取低GI食物能延長力竭時間,提升運動表現,運動過程則選擇中至高GI食物以維持運動員耐力及延緩疲勞發生,運動後給予高GI的食物能迅速補充運動時消耗的肝醣,快速恢復運動員的體力。本文主要就食物之昇糖指數介紹及討論其對於耐力運動表現之影響。
