薑黃素(curcumin)來自於薑黃根莖(curcuma longa),屬咖哩原料之一,在過去傳統藥理學中經常使用於治療膽道疾病、食慾減退、咳嗽等。經研究證實,薑黃(turmeric)中的薑黃素是最具藥理性質的物質,所佔成分比例最高,其特殊的結構使之更有利於抗氧化與抗發炎等作用,薑黃素在劑量上的使用,對人體的毒性低,且副作用小。此外,薑黃素對於第二型糖尿病、動脈粥狀化以及肌肉營養缺乏等症狀都具有療效。在高強度運動下人體會大量的產生氧自由基,因而導致肌肉組織的損傷;因此,如何有效地避免傷害的發生,有動物研究利用薑黃素做爲補充劑,發現可降低肌肉損傷及發炎反應,同時減緩運動後細胞激素的增加,提高抗氧化能力,但對於人體實驗研究及相關文獻付之闕如,其效果仍須進一步釐清。
