槲黃素為天然的營養補充品,屬於植化素(phytochemicals)中的類黃酮類(flavonoids),富含在蔬菜、水果當中。類黃酮類為多酚化合物(polyphenolic flavonoid compounds)中最大的一類,其基本結構上包含了三個苯環分子,且具有不溶於水之特性。服用槲黃素後對於人體生理上之作用包含有:抗氧化、止痛、抗癌、降低高血壓發生的風險及改善糖尿病的情況。目前文獻多以運用其抗氧化能力來研究,近年來在運動方面也有相關研究來探討其功效。因此本文藉由先前槲黃素方面相關的研究,找出已被研究證實的功能做討論,並進一步作為將來研究之參考。
