     促進個人健康的方法,不僅是要有充足的營養,規律的運動更是不可或缺,它不僅可以促進個人體適能,更可提高生活品質,減少罹患各種慢性病的機會。而在運動員方面藉由營養素的增補,來達成促進運動表現的方法及手段,更是流傳已久,其效果頗為顯著。由此可知不管是一般民眾或運動肩對營養素的需求,都是必需的。然而在運動的同時卻也會產生傷害人體的物質--自由基。從另一角度得知,當自由基形成時,它們除了會逐漸的自動分解外,在人體方面也會產生防禦系統來排除自由基的連鎖反應。如:超氧化歧化 (SOD)、過氧化氫、穀胱甘太過氧化 (GPx)、穀胱甘太過還原(GRd)等抗氧化 。除了人體會自動產生防禦系統外,在體外食物中攝取維生素C、維生素E、B胡蘿蔔素等物質,也是抗氧化的重要方式。其中維生素c及維生素E的交互作用,對於細胞膜的保護,防止脂質氧化物的生成,有很大的貢獻。雖然維生素C、維生素E對於細胞有保護作用,但如果過量對細胞反而會造成傷害,如何才是適量呢?對人體有益呢?本文主要是針對其機轉過程,來遂一探討其作用。
