耐力性運動時,提供脂肪酸的主要來源來自腹部皮下脂肪組織,耐力運動會增加氧化壓力,在兒茶素的相關研究中指出,食用兒茶素能提升小腸與腎臟內碳水化合物代謝酶的活性、並抑制肝臟內糖質新生的作用,提高抗氧化防禦酶的活性、降低血中低密度脂蛋白膽固醇和三酸甘油酯濃度及提高高密度脂蛋白膽固醇和飢餓素(ghrelin)的濃度、減少心血管疾病的危險因子、向上調整了肝臟中β-氧化活動,兒茶素的抗氧化以及提高脂肪代謝的功能已被許多的研究支持;在耐力性運動表現的提升上,攝取綠茶萃取物可能藉由調控malonyl-CoA的濃度來增加骨骼肌中脂肪酸β-氧化的活動、減少運動時肌肉肝糖的消耗、增加骨骼肌中脂肪酸轉化酶(fatty acid translocase/CD36) mRNA的表現;進一步的分析可能是藉由表沒食子兒茶素沒食子酸酯(EGCG)來調控脂肪酸的代謝。綠茶萃取物-兒茶素提高脂肪酸做爲耐力運動時的主要能量來源的百分比,保存肌肉內的肝糖濃度,改善老鼠的耐力性運動表現(增加跑步的距離)。然而攝取兒茶素對耐力運動的表現目前的研究尚在動物實驗階段,是否在人類上有同樣的效果則需更多的實驗來證明。
