Jiuefen is an unsophisticated traditional town. In the end of 1980s, the rise of national travel invigorated Jiufen, a mountain town which had been silent and depressed for a long time. The natural environment, architectural style, and traditional cuisine of Jiufen are very unique. This declining gold mining town has been transformed into a domestic and international tourist attraction. The store owners of Jiufen Old Street jointly formed the Business District Fraternity, which gradually stabilizes the organization of business district. The local cultural industry is rooted in specific place and space. The confirmation of historical values, such as historical and cultural insights, living memory, and product of traditional culture, endows local residents with a specific sense of identity and belonging.This study selected the dietary and tourism environment of Jiufen, a mountain town which was famous for gold mining in the past, as the subject. The purpose of this study is to investigate the historical background and transformation of Jiufen, the dietary and cultural industries of Jiufen, and the transformation of dietary and tourism environment of Jiufen. This study used qualitative research methods, including in-depth interview and literature review. The research findings are: 1) there is a unique dietary and tourism environment in Jiufen owing to the specific relationship among history, culture, and industry; 2) the uniqueness of Jiufen is its preservation of landscape in the Japanese Colonial Period to attract a large number of tourists and create unlimited business opportunities; 3) the teahouse culture has been integrated into the special view and pace of life in Jiufen.
