The Project for Local Cultural Museums funded by the Council of Cultural Affairs has run for the past six years. During this time 270 Local cultural museums have been established. Some local cultural museums are characterized by their regional industrial culture, for example the Glass Museum of Hsinchu City, the Dajia Rice Culture Museum, Taiwan Salt Museum, and the Sauerkraut Museum in Yunlin-Dapi. In this article we introduce conservation issues and especially the exhibition design at the Sauerkraut Museum. According to Habermas we differentiate three levels of local knowledge, namely technical knowledge, communicative knowledge and last but not least critical knowledge. In the light of this scheme we examine the problems relating to conservation and exhibition in the museum and finally make some suggestions as to how these may be improved.
