題名:從保護動機探討食安問題的恐懼訴求對綠色餐廳消費意圖之研究

目前國內食品安全問題陸續爆發,無形中造成消費者對食品的安全問題產生了恐懼,進而透過各種訴求反應,以求得保障。鑑於此因素,本研究以恐懼訴求之保護動機理論(PMT)為基礎,探討有關消費者對食品安全問題所知覺到威脅與知覺到效能來進行實證,並與計畫行為理論(TPB)模式為本研究架構根基,進而加以延伸在「綠色餐廳」消費意圖的議題上。本研究目的,首先在消費者知覺到威脅會影響態度進而影響綠色消費意圖。接著;從消費者知覺到效能,從反應效能會影響主觀規範,及自我效能會影響知覺行為控制,進而影響綠色餐廳消費意圖。另外,本研究考量到消費者的前往綠餐廳消費的成本,故以願付溢價為干擾變數,檢測態度與綠色餐廳消費意圖之間的干擾效果。並以台北、台中、高雄三個大都會區,一般餐廳的消費者為研究對象,進行問卷發放。研究結果顯示,假設均成立,呈顯著性正向影響。而願付溢價之干擾變數,對態度與綠色餐廳消費意圖之間具有干擾效果。其研究結果,希望能給予餐廳業者及政府部門站在保護消費者的角度,重視食品安全,並推動一個能讓消費者免於恐懼的綠色餐廳。另外,也希望消費者能站在推動綠色環保與食品安全環境的立場,能身體力行,給予餐廳業者及政府部門全力支持。
Ongoing food scandals in Taiwan have driven consumer fears about food safety and have led to consumers seeking various means of protecting themselves. Therefore, this study employed protection motivation theory (PMT), which addresses fear appeals, to empirically investigate consumer perceived threats and efficacy regarding food safety issues. In addition, this study employed the theory of planned behavior (TPB) as a theoretical foundation to enable exploring the consumption intentions of consumers in green restaurants.This study investigated (a) the indirect effect of perceived threats through attitude on the intention to eat at green restaurants; (b) the effect of perceived efficacy on subjective norms; and (c) the indirect effect of self-efficacy through perceived behavioral control on the intention to eat at green restaurants. In addition, this study considered how much consumers are willing to spend at green restaurants by using willingness to pay a premium as a moderating variable to examine the moderating effect between consumer attitudes and their consumption intentions in green restaurants. Respondents to our questionnaire were consumers in regular restaurants in Taipei, Taichung, and Kaohsiung.The results showed that hypotheses were supported, exhibiting a significant positive effect. However, as a moderating variable, willingness pays a premium moderating to effect on the relationship between consumer attitude and consumption intention at green restaurants. The findings, hope to give the restaurant industry and government to the consumer's point of view. The importance is food safety, and consumers are freedom from fear in promoting green restaurants. Also, They hope the consumer to promote friendly environment and food safety in standpoint, the restaurant industry and government departments full support.
