餐旅業界強調實務經驗,爲了協助學生能順利地進入未來工作職場,餐旅教育之課程設計,除教授餐旅相關的理論,多有業界實習之必修學分,使學生能結合理論與實務,並能提前爲進入工作職場作準備。本研究的目的是探討大學餐旅科系辦理校外實習產生的問題做分析,主要的研究設計是以文獻資料的內容分析法,蒐集從西元2000年至2007年間有關大學餐旅科系校外實習之國內博碩士論文與中文期刊,計有中文期刊11篇與學位論文13篇,共計24篇相關研究,研究者以問題分析量化矩陣將24篇文獻樣本作詳細的資料整理與分析討論,研究分析發現,國內大學餐旅科系辦理校外實習主要問題爲校外實習前置作業、實習規劃、行政執行、課程設計、教學品質與實習效益等六方面,並對照國內外相關研究提出討論。從文獻回顧中發現實習制度的好壞將會影響學生在餐旅產業的發展,因此建議餐旅課程規劃者從實習制度與課程規劃著手,各校可依其實習制度做彈性調整,評估並聯結產業界和學術界以達到平衡,並且設置專業且足夠的實習專員專門負責校外實習的進行,從經費的取得、實習規劃、建立與業界的關係、實習支援、輔導訪視到實習效益的評估等以幫助學生完成實習學分。
The hospitality industry emphasizes practical experience. In order to assist students in entering their future careers, the curriculum design of hospitality education include industry internship credits in addition to hospitality relevant theory. Students combine the theory and practical experience, and make preparation for the job ahead of time. The purpose of this research was to treat the school-outside internship problem of hospitality department in Taiwan. The main research design was documents content analysis. Twenty four texts included domestic theses and dissertation and Chinese journals from 2000 to 2007 were selected as subjects for analysis. There were summed up 24 researches related, including 11 academic journals and 13 theses for graduation. The results cast the problem about the school-outside internship program of hospitality department into six respects that included preparation for internship, plan of internship program, administrant performance, curriculum design, quality of education and benefit of internship. The results suggest the responsibilities of internship coordinator include acquiring the budget, planning internship program, establishing relationship with hospitality industries, supporting intern, counseling and visiting the students, and evaluating the benefit of internship program to assist students in completing internship credits.
